During the create quote process, if you have selected a country where you can use its local currency, you will be presented with the option to use US Dollar or the local currency in the Revenue field:
To use the Local Currency, simply check the Use Local Currency box and the currency will switch in the Revenue field:
The currency selected will also be presented in the Limits and Quote Price sections:
